It has been 3 months since I last racked the banana wine, so here is a quick update. Both wines are clearing nicely. The wine that was boiled is actually clearer then the one made with chemicals. And so on to taste… they both are still acidic, but mellowing nicely. The boiled banana wine seems to be more mellow. I will update with pictures again in 3 months.
